I know you are a very good cook, but these Spaniards have such dishes that I have gained some weight :). Everyone knows the Spanish paella and tortilla, but croquettes, they are a story for themselves. I am sending you a recipe for croquettes, so that you can practice how to make them and when I visit you in the summer surprise me with a full plate of croquettes, hahaha, if your father won’t eat them while watching a football game!!!

300 g cooked veal or any other meat from broth, 55 g flour, 55 g of butter, 1.5 onion, 600 ml milk, 60 cheese

Take a frying pan and fry onions in olive oil until light brown, add the butter. When dissolved, add the flour, stir and fry a little, add the warm milk, and stir to thicken. While stirring the mass should deviate from the edge of the pot, add grated cheese and minced cooked meat. Add salt, pepper, and a little nutmeg. All mix well and put in the fridge overnight. In the morning form the croquettes, roll them in the beaten egg and bread crumbs. Fry them.
